On-The-Go Baked Oatmeal Recipe Is Quick, Easy and Flavorful

This fruit-flavored oatmeal can be reheated over and over.

This time of the year offers no time to sit down to a hot breakfast. In order to have the time to make one, we have to consider getting up at least one hour ahead of our alarm just to be able to prepare it and clean up.

This breakfast is an "On-The-Go Baked Oatmeal". Make it the night before and have it the entire week. A quick heat-up with added milk makes a quick breakfast that can be eaten in the car or at the table. Healthy and flavorful.

My daughter came home bragging about her future mother-in-law's breakfast dish that she makes every Sunday before church and they have the rest of the week.  I listened and then pulled out my recipe box and realized that I had the same recipe; yet mine never created memories the way theirs did.  

The reason? I never made it.  

Lesson learned. A recipe is like wood—unless you use it your don't realize its awesomeness.  My new memory about my Baked Oatmeal is that it is now passed on to you and you can impress your inlaws.

On-The-Go Baked Oatmeal

greased 9 X 13 baking dish

Oven 350 degrees

4 eggs

2 cups milk

2/3 cup oil

1 cup brown sugar or 2/3 cup honey

4 tsp baking powder

2 tsp salt

1 1/4 tsp cinnamon

3-4 cups oats (quick or old-fashioned oats)

1 small can peaches (diced or cubed) or any fruit you desire+ juice

Mix all together and bake 

quick oats—30 min

old-fashioned oats—45 min

I made this Sherry and it was perfect. I also tried the garlic lemon chicken. You go girl and rock on with your big bad self! LOL. you are the best cook we all know!

Penzey's Spice catalog had a similar recipe that I made in the ceramic insert of my slow cooker. (One of the big oval slow cookers). I used to take it to work for my coworkers for a special treat and keep it warm in the slow cooker. It did not have the peaches or other fruit baked in it so I'm going to try that. Thanks for reminding me to whip that out sometime soon.
