I'm already preparing my menu for Thanksgiving, yes. It reminds me of seeing Christmas trees before Halloween. But this evening, I wanted a dessert fast and easy, and from all the staples I had in my house. Yes, cranberry sauce is a staple in my house. I came across an old recipe of mine called Cranberry Crunch. It's one that will make Grandma proud.
Cranberry Crunch
1 cup uncooked oatmeal
1/2 c flour
1 cup brown sugar
1 can whole cranberry sauce
1/2 c butter or oleo
Mix oatmeal, flour and brown sugar. Cut in butter until mixture is crumbly. Pack 1/2 of mixture in bottom of greased pie plate or small baking pan. Cover with cranberry sauce. Top with remaining crumb mixture. Bake at 375 degrees for 50 minutes. Cut into squares and serve warm with vanilla ice cream or whipped cream.
